Aspergillus fumigatus

It is a thermophile with a temperature range for growth of between 10 and 55 C and an optimum between 40 and 42 C. It is one of the least xerophilic of the common aspergilla.It is best found in decaying vegetation, in which it causes spontaneous heating.It is best recognized as a human pathogen causing aspergillosis of the lung. It is isolated frequently from foods particularly stored commodities.

Aspergillus fumigatus is capable of producing several toxin one is called fumitremorgens A, B and C which are toxic cyclic dipeptides.which affect the central nervous system, causing tremors.Mycotoxins can enter the food chain through meat, eggs, milk, dairy products if animals have eaten contaminated animal feed.
Disease
Mycotoxins could also interfere with/inhibit bacterial cultures required for various food-processing activities (e.g. yoghurt, cheese-making) and can also impair immune systems and compromise kidney/liver systems. The risk to human health will depend on the type of mycotoxins, the level of exposure and the duration of exposure.
